Label Styles is a feature at the very bottom of the Keynotes Palette allowing you to set different defaults for your Keynotes.
You just set up the Keynote as you want it and choose ‘New Style':
Give it a name and that is stored and used from now on:
You can then add another style and choose as you place notes how you want you Keynote formatted
